What Is Gözleme? Türkiye’s Traditional Griddle-Baked Flatbread

WhatsApp

Thinly rolled dough, fillings ranging from cheese to potatoes and the aroma of a hot griddle—discover what gözleme is, which varieties to try and how to order it in Türkiye.

A piece of dough is rolled until paper-thin, then filled with cheese, spinach or potatoes. It is folded over and cooked on a hot metal griddle until both sides are covered with golden-brown spots. A little butter may be brushed over the top before serving.

The result is gözleme, one of Türkiye’s best-loved traditional flatbreads.

Gözleme is warm, filling and made from simple ingredients. You can find it at village breakfasts, local markets, roadside restaurants and breakfast cafés in the cities. At its best, it is prepared after you order and served straight from the griddle.

#How Is Gözleme Made?

The dough is usually made with flour, water and salt. It is divided into small balls and rolled into large, thin sheets using an oklava, a long and slender Turkish rolling pin. The filling is spread over one side, and the dough is folded into a half-moon or rectangular shape.

Traditionally, gözleme is cooked on a sac, a slightly curved metal griddle. Its high heat cooks the thin dough quickly and creates the small toasted marks across its surface.

A good gözleme should be lightly crisp outside and soft inside. Dough that is too thick hides the filling, while too much oil makes it heavy. In the best versions, the dough and filling complement each other.

Popular Types of Gözleme

Fillings vary by region and restaurant, but these are the varieties you will see most often:

Peynirli gözleme: Filled with Turkish white cheese, lor cheese or a regional cheese, sometimes mixed with parsley. Ispanaklı gözleme: Made with spinach, which may be combined with onions, spices or cheese. Patatesli gözleme: Filled with mashed potatoes, onions, red pepper flakes and spices. Soft and satisfying. Kıymalı gözleme: Contains cooked minced meat, onions and seasoning. It has a richer and stronger flavor. Karışık gözleme: A mixed version combining ingredients such as cheese, spinach, potatoes or minced meat. Kaşarlı gözleme: Filled with kaşar, a mild Turkish yellow cheese that becomes soft and stretchy when hot.

For your first gözleme, cheese or spinach and cheese are good choices. If you want to taste the dough and the flavor of the hot griddle more clearly, choose a simple filling rather than an overloaded mixed version.

How Is Gözleme Served?

Gözleme is normally cut into triangular or rectangular pieces and served hot. It may come with tomatoes, cucumbers, fresh greens, olives or pickles. Turkish tea and ayran are the drinks most commonly enjoyed with it.

You can use a knife and fork, but eating gözleme with your hands is completely normal in Türkiye. Just be careful when it has come straight from the griddle—the outside may feel cool enough to touch while the cheese or potatoes inside are still extremely hot.

Are Gözleme and Bazlama the Same Thing?

No. Gözleme is made from thinly rolled dough that is filled, folded and cooked on a griddle. Bazlama is thicker, softer and closer to a round flatbread. Ingredients can be placed inside sliced bazlama, but that does not make it traditional gözleme.

Gözleme is sometimes described on English menus as a “Turkish pancake.” Although the phrase makes it easier to recognize, gözleme is not a sweet breakfast pancake. It is better understood as a thin, filled, savory flatbread cooked on a metal griddle.

Is Gözleme Suitable for Vegetarians and Vegans?

Cheese, spinach and potato varieties are generally suitable for vegetarians. It is still worth asking whether meat has been added to a spinach or potato filling.

Vegans can request spinach or potato gözleme without cheese or butter. The dough often contains no milk or eggs, but recipes vary. Ask about both the dough and whether butter will be brushed over the top.

Useful Phrases When Ordering Bir peynirli gözleme, lütfen. — One gözleme with cheese, please. İçinde ne var? — What is inside it? Acı mı? — Is it spicy? Tereyağı sürmeyin, lütfen. — Please do not add butter. Et var mı? — Does it contain meat? Peynir ve ıspanaklı olsun. — I would like it with cheese and spinach. Our Advice for First-Time Visitors

If possible, choose a place where you can see the dough being rolled and the gözleme cooking on the griddle. There is a noticeable difference between one made to order and one that has been prepared earlier and reheated.

For your first taste, order cheese or spinach and cheese. Add a glass of Turkish tea or ayran, and eat it while it is still hot.

Gözleme is not a luxury dish—and that is part of its charm. When thin dough, a good filling and a hot griddle come together, it needs very little else.
