Lake Çıldır’s Sarıbalık: A Taste of Life Beneath the Ice

WhatsApp

Discover Lake Çıldır’s sarıbalık through its fishing traditions, lakeside meals and practical advice on ordering this local carp speciality.

Your fork breaks through the browned surface. Beneath it, the fish is still moist, releasing a little steam as you separate a mouthful. Try the first bite before reaching for the lemon; let the cooking and the fish speak for themselves.

Outside, Lake Çıldır stretches towards the horizon. In winter, its frozen surface can make the water seem impossibly distant from the warm plate in front of you. Yet beneath that ice, the lake continues to feed the communities along its shores.

This is the setting in which to discover sarıbalık, one of Lake Çıldır’s best-known local foods.

What Is Sarıbalık?

A fisheries study identifies sarıbalık as the local name for common carp, Cyprinus carpio, and describes its particular importance in the region’s food and fishing culture.

You may also encounter the name aynalı sazan, meaning mirror carp. Mirror carp is a form of common carp, but the local name sarıbalık should not automatically be understood as referring exclusively to it. When ordering, ask which fish is being served.

For a traveller, remembering the local name is useful. It opens a conversation about the catch, its origin and the way the kitchen prefers to cook it.

The Lake Behind Your Lunch

Lake Çıldır lies between Ardahan and Kars, covering approximately 123 square kilometres. Fishing provides an important livelihood around its shores, alongside livestock farming on the surrounding pastures.

Winter brings a distinctive fishing practice: openings are made in the frozen surface so fishermen can work their nets beneath the ice.

Think about that work when your meal arrives. A plate of fish has a journey behind it, involving weather, patience and a catch that is never guaranteed.

Akçakale village, on the Ardahan side, is part of this fishing landscape. Reporting from the village documents a fisherwoman serving her catch in her restaurant, either fried or grilled according to her customers’ preferences.

Fried or Grilled?

If you enjoy the contrast between a browned exterior and moist flesh, ask about the fried version. Grilling offers another way to try the fish, with the result depending on its size, preparation and the cook’s skill.

There is no need for an elaborate order. Ask how the kitchen recommends preparing that day’s fish. If lemon is served, try a little after your first bite and notice how the acidity changes the flavour.

Take your time with the bones. Carp is not a fish to assume will arrive boneless, even when cut into portions. Ask about the preparation, especially when ordering for children.

How to Order Without Guessing

A few simple questions help:

“Sarıbalık var mı?”
Do you have sarıbalık?

“Balık Çıldır Gölü’nden mi?”
Is the fish from Lake Çıldır?

“Porsiyon fiyatı mı, kilo fiyatı mı?”
Is that the price per portion or per kilogram?

Confirm what comes with the meal, too. Salad, bread and drinks may be priced separately.

For a meal by the water, look into lakeside fish restaurants along your planned route. Call before making a special journey to check opening hours and fish availability. A restaurant beside the lake does not, by itself, guarantee that every fish on its menu was caught there.

Leave Time for the Shore

Make lunch part of your visit to Çıldır rather than a hurried stop between photographs. Allow time to look at the water and, if the opportunity arises, talk to someone about the fishing.

In winter, arrange any ice fishing observation with an experienced local operator and confirm conditions on the day. Freezing dates and safe access vary; a white surface alone tells you very little about the ice beneath it.

What You Take Away

When the plate is cleared, the lake is still there.

Perhaps that is what makes the meal stay with you: the warmth of the food after the cold outside, the care taken over a mouthful, and the thought of someone drawing a net through water you could barely see.

Later, when you remember Çıldır, the photograph may come first. Then the taste.
