Istanbul restaurant bills — what's an extra charge and what's just a tip?

Okay, how do you avoid an awkward argument when the restaurant bill comes? I keep finding different answers about service charges, “kuver” and tipping. Some posts are years old, so I'm not sure what still applies. If a waiter brings bread, water or little appetizers we didn't order, should we ask the price before touching anything? I dont want to assume it's included and get a surprise later. And when paying by card, do you normally get an itemized bill first? Back home I'd check it, but I can already picture trying to do the math while one kid needs the bathroom and the other wants to leave 🙃 What's a polite way to question an extra charge without it turning into a whole thing? Happy to leave a tip for good service. Just want to understand what we're actually paying for.

Yep, check the bill even if the meal was lovely. Compulsory service and “kuver” charges were banned in January 2026, but a ban isn’t a reason to stop looking at what’s on your bill. And “it’s written on the menu” doesn’t make a compulsory charge okay. “Kuver” is a cover charge, “servis” is service, and “bahşiş” is a tip. The tip is your decision. Something automatically added to your total isn’t suddenly voluntary because the waiter calls it a tip. When bread, water or little starters arrive, ask “İkram mı, ücretli mi?”—complimentary or charged? If they say charged and you don’t want it, send it back straight away. Much easier than discussing a bowl of olives after everyone’s eaten it 😅 Unordered starters brought out before your order shouldn’t be charged, but settle the question while they’re putting them down. My move with kids would be to ask for the itemized bill while they’re finishing their food. Don’t wait until one needs the bathroom and the other has their coat on. Keep your card in your pocket until you’ve checked the dishes, drinks and any extra lines. The total on the card machine isn’t an explanation. If there’s something odd, point to it: “Bu ücret ne için?” What’s this charge for? If you didn’t order it, say “Bunu sipariş etmedik.” Give them a chance to correct it without turning dinner into a fight. If they insist on a compulsory service or kuver charge, ask for the manager and say clearly that you want it removed before paying. Show the menu if the problem is a different food price. Stay calm and firm—you don’t need to apologise for checking your own bill. But nobody can promise they’ll back down, so don’t turn it into a bluff or a shouting contest. Once the bill is right, leave a tip if you want. A little cash keeps that separate and simple. Good service can earn a tip; pressure doesn’t.
